<image:caption>The Carlton Beach Club is one of the most recognisable beachfront images in the region. Positioned directly off La Croisette, it offers a seamless connection between the city, the hotel and the Mediterranean. The design of the terrace and space is vibrant with a mix of yellows, whites & blues combining to create a sense of heritage and distinction. The menu offered focuses on Mediterranean and Riviera cuisine, with an emphasis on seafood and dishes best enjoyed by the beach. They have some signature cocktails which make spending hours there, pass without a care in the world. Afternoons here are best enjoyed starting with lunch before allowing the afternoon to slip away by the bar.</image:caption>

<image:caption>Located within the Carlton Cannes, Bar°58 offers an intimate setting within a space that is designed for those who wish to be seen. It is a space where the bar itself dominates from all corners and draws the attention of those within. Seats at the bar itself are often the most popular, where the work of the bartenders can be admired in full view. Here, classic cocktails are elevated by signature creations to fit the season and festivities of Cannes. In particular, the Beluga Martini is for those who want to be adventurous. A considered offering of mocktails also takes centre stage here, for those who want a lighter occasion. Light snacks are provided with drinks and a small but well considered bar food menu is on offer here. In particular the lobster roll stands out for it’s distinct flavour. Evening live music is a key offering here on Thursdays, Fridays and Saturdays and elevates the atmosphere within the space. P&M tip: Aim to arrive early evening if you wish to find a seat to enjoy the evening entertainment.</image:caption>

<image:caption>La Table du Chef is an experience that is unique within the Cannes dining scene. Built around a surprise four-course tasting menu, the experience focuses on creativity and suspense. The menu is carefully crafted by chef Oumar Nimaga, who crafts a starter, fish, meat and dessert course using the finest local produce on offer. There is no fuss or fanfare here, instead you receive carefully crafted food, timed to perfection with clear intent and continuation between courses. The bistro is small and intimate, therefore pre-booking is a must so if you are planning well in advance, this should be one reservation that is first on the to-do list. In the summer, the dining space is extended outside onto the street and becomes a lively, yet inviting place to be. P&M Tip: If you have strict dietary requirements, this should be made clear to the restaurant at the time of booking to avoid disappointment.</image:caption>

<image:caption>Cannes is best experienced over two to three days, however, longer stays of up to a week can easily accommodate a trip exploring multiple destinations across the region. Day one is best spent exploring the city, and particularly La Croisette. With no shortage of dining options and beach clubs, it creates the perfect start to any visit. Day two may be used to explore the city or surrounding areas further, however a well-planned dining or evening experiences can cap the day off with style. The good news is that the small footprint of the city means most dining options are within walking distance or a short car journey from hotels.</image:caption>

<image:caption>This Edit will benefit those who prefer to stay in a Cannes hotel that offers more than just a name and photo opportunity. Hôtel Martinez works particularly well for travellers looking to experience the Riviera through one property rather than constantly moving between destinations. Its location on the Boulevard de la Croisette places guests at the centre of Cannes, whilst still allowing easy access to Nice and the wider Riviera. The combination of beach club, dining, bar venues, spa and well-appointed accommodation allows the property to function as more than simply a hotel base. It caters well for solo travellers, couples and families alike, whilst remaining adaptable to different styles of travel and lengths of stay. The Standard Every recommendation in this Edit is assessed against the same five points: service, design, food and drink, atmosphere and value. Value is not about cheap or expensive. It is whether the experience earns the time and price invested.</image:caption>

<image:caption>First opened in 1929, Hôtel Martinez still carries many of its original influences today, particularly through the Art Deco design found throughout the property. Opening during a period of transition between the roaring twenties and a time of wider global upheaval, the hotel has nevertheless maintained its position on the waterfront of Cannes throughout the decades that followed. The hotel has undoubtedly benefited from the landscape upon which it stands. The decision to build the property on this stretch of the Boulevard de la Croisette came from Emmanuel Martinez, who in 1927 set out to create one of the most luxurious hotels on the French Riviera. Cannes itself had already become a destination favoured by visitors since the 1830s, when British aristocrats would travel through the region enjoying the climate, particularly during winter and spring, as part of wider journeys through France and Italy. Today, Cannes continues to attract visitors from across the world and remains one of Europe’s most recognisable Riviera destinations.</image:caption>

<image:caption>Today, Hôtel Martinez forms part of the Unbound Collection by Hyatt, having first entered into its relationship with Hyatt in 2013 before becoming an Unbound Collection property in 2018. For those who prefer to book using World of Hyatt points, the hotel is categorised as a Category 7 property. Since then, the hotel has undergone extensive renovation, reimagining and design updates to ensure it remains a property worthy of its prestigious reputation. Some of the more notable developments include the addition of the Penthouse Apartments in 2021, the continued evolution of La Plage du Martinez and the relaunch of La Palme d’Or, which remains one of the Riviera’s strongest gastronomic destinations. This combination of facilities, dining and hospitality, alongside a clear determination to maintain consistent service standards, ensures the property feels relevant today rather than simply connected to its past. In 2026, the hotel was also revealed as the setting for The White Lotus Cannes, the latest instalment of the acclaimed HBO series The White Lotus, which will undoubtedly further elevate the global profile of the property.</image:caption>

<image:caption>For this stay, the room category was a Premium Room King, which offers partial sea views. It is important to note that not all Premium Rooms include a sea view unless specifically categorised as a Premium Sea View Room. This is reflected within the booking category, so it is worth checking in advance should this be important to your stay. The room itself is well proportioned, with a colour palette of light blues, pale yellows and whites, a combination that can easily create the impression of being aboard a yacht sailing along the Riviera. Well-placed mirrors surrounding the headboards and doors create a greater sense of space and openness, which further enhances the airiness the room offers. There is ample seating and storage throughout, including a separate armchair and side table, built-in desk and cabinetry, which also houses the minibar alongside tea and coffee facilities.</image:caption>

A large vanity unit sits alongside a separate bath, which looks through an opening into the bedroom, although a retractable privacy screen is located in the bedroom when required. The toilet and walk-in shower are both housed within separate enclosed spaces, creating a bathroom that feels private, spacious and thoughtfully designed, befitting of the wider hotel. <image:caption>The Penthouse Apartments at Hôtel Martinez are what truly set this property apart from many others on the Riviera. Located on the top floor of the hotel, they offer uninterrupted views across the coastline and possess what can only be described as some of the finest terraces on the Croisette. These apartments were redesigned in 2021 by the acclaimed interior designer Pierre-Yves Rochon. They are split into two distinct apartments, one named after Isabelle Huppert, the renowned French actress, and the other after Thierry Frémaux, Director of the Cannes Film Festival. When combined into one connected suite, the accommodation spans a total of 1,250 square metres, making it one of the largest hotel suites in Europe.</image:caption>

<image:caption>The Isabelle Huppert Apartment can best be described as a space where the interior is designed to complement the exterior view. A combination of whites, creams and golds create an atmosphere that feels open, calming and complete. The apartment consists of a large open-plan lounge space with generous seating throughout, whilst a separate formal dining room leads from the main living area. There is one well-appointed bedroom with a large ensuite overlooking the terrace and sea beyond. A separate walk-in dressing room is positioned opposite the bedroom, whilst an additional connecting bedroom can also be added to expand the apartment further.</image:caption>

<image:caption>The Thierry Frémaux Apartment is the larger of the two and embraces a much darker design palette, combining midnight blues and blacks to create a striking setting. It is undoubtedly a nod to both the hotel’s Art Deco heritage and Cannes’ wider association with cinema, refinement and spectacle. This apartment contains two distinct bedrooms, each with dedicated lounge spaces. The primary bedroom features a large connected ensuite, with a dressing room located opposite. There is also a dedicated fitness space, further elevating the guest experience and privacy. A suite in Cannes would arguably not feel complete without a screening room, and here the cinema space feels entirely befitting of what Hôtel Martinez seeks to represent. Whilst this apartment doesn’t include a separate dining room, a large dining area within the main lounge equally benefits from exceptional terrace views.</image:caption>

<image:caption>The terraces at Hôtel Martinez are by far the most exclusive feature these apartments and the wider hotel have to offer. With uninterrupted 180-degree views across the Bay of Cannes, the scale and beauty of the view takes several moments to fully absorb. During the summer months, and especially throughout the Cannes Film Festival, these terraces become destinations in their own right, regularly hosting exclusive receptions, parties and brand events high above the Croisette.</image:caption>

<image:title>Edits - Hôtel Martinez, Cannes | At the Centre of the Riviera Stage - Image: The Martinez Bar. © 2026, Palates & Miles</image:title>
<image:caption>At the centre of the hotel’s offering is undoubtedly the Martinez Bar, which reopened in March 2025 following a redesign by Rémi Tessier. The atmosphere created through the use of reflective red glass, gold leaf and exquisite furnishings and woods creates a space that feels intimate, warm and private. However, what truly defines the character of the bar is the people who run it. Delphine Grossmann and her team create not only a selection of world-class cocktails but also a community that draws tourists and regular visitors from across the Riviera. Delphine’s personality transcends the carefully crafted menu into something that helps define not only the experience, but also the memory of the space itself. What is particularly remarkable is how the atmosphere evolves throughout the evening. On Saturdays especially, the bar transforms from a tranquil and relaxed setting into what can only be described as one of Cannes’ most enticing late-night destinations, with a DJ performing into the early hours. During the peak summer season, this atmosphere extends into additional evenings throughout the week. The investment into this venue is clear and entirely justified, as it creates the conditions for a genuinely memorable evening.</image:caption>

<image:caption>La Palme d’Or is a dining space that defines not only Hôtel Martinez, but also much of what Cannes itself has become known for. Drama, theatricality and atmosphere combine throughout both the design of the restaurant and the food carefully prepared within it. The offering reflects the produce of the wider region, with fish dishes in particular designed to showcase the quality of local Mediterranean catches. A restaurant sharing its name with the film festival’s most prestigious award would arguably feel incomplete without embracing the world of cinema itself. The menu is presented in the style of a film script, complete with handwritten annotations designed to replicate a working screenplay. The décor equally leans into this identity, with props, original scripts and notes from actors and directors displayed throughout the dining room. Designed by Rémi Tessier, the restaurant succeeds in creating a space that feels instantly recognisable and entirely aligned with the wider identity of Cannes. The atmosphere never feels theatrical for the sake of it. Instead, every detail appears carefully considered and connected to the experience the restaurant is trying to create.</image:caption>

<image:caption>The menu can be experienced either through a tasting format or à la carte, depending on the diner’s preference. Two tasting menus are available, the three-course Short Film and the five-course Feature Film, with each dish intended to act as an individual scene within the wider evening. However, the five-course experience is by far the stronger option, as it allows for a much more complete understanding of both the quality of the produce and the rhythm of the kitchen. All menus begin with the signature amuse-bouche, immediately grounding guests in the identity of the restaurant. On this occasion, the standout dishes from the Feature Film menu were undoubtedly the lobster, flambéed tableside, and the red mullet, which was exceptionally fresh and precise in execution. Equally, the sweetbread introduced a richer flavour profile that complemented the earlier dishes particularly well. The menu remains highly seasonal and evolves according to the best available produce at the time.</image:caption>

<image:caption>Unsurprisingly for a hotel positioned directly on La Croisette, the beach club is one of the most visible parts of the property to those passing by. As a result, considerable care and attention has clearly been given to the overall offering. Redesigned by Rémi Tessier in 2023, the restaurant and terrace remain very much in keeping with the wider identity established at La Palme d’Or. The space embraces deep blues and browns, reflecting the tones of the seafront. Director’s chairs bearing the names of actors and filmmakers further reinforce the connection between the hotel, cinema and Cannes itself. The strongest aspect of La Plage du Martinez is how naturally it connects the hotel to the waterfront itself. The menu combines traditional Riviera cuisine with lighter sharing plates, allowing the space to cater well to the varying pace and expectations of visitors throughout the day. Strong influences are drawn from both the French Riviera and the wider Mediterranean, whilst food and drinks can also be served directly to the loungers positioned across the beachfront and pontoon. Open from mid-spring until mid-autumn each year, La Plage du Martinez remains particularly popular with both hotel guests and visitors arriving directly from La Croisette. There is, however, a separate charge for use of the sunbeds, so this is worth considering in advance when planning your visit.</image:caption>

<image:caption>This is where Hôtel Martinez places wellness more centrally within the guest experience. The gardens provide ample shade alongside quieter spaces to either exercise or relax within the wider rhythm of the property. The outdoor pool is also located here, where the deep blue design language found throughout the hotel continues, creating a setting where guests can comfortably spend an entire afternoon. There is also a pool bar, where drinks and lighter food options are available throughout the day.</image:caption>

<image:caption>Grasse’s reputation as the perfume capital of the world can be traced back to the 16th century. At the time, the town was known for the tanning of leather. However, the strong odours associated with this process led to the introduction of scented gloves. This quickly evolved into a craft, with local producers beginning to extract and blend fragrances using flowers grown in the surrounding countryside of Provence. Over time, Grasse became the centre of perfume production in France. Its favourable climate allowed for the cultivation of jasmine, rose and orange blossom. These raw materials, combined with generations of expertise, established the town as a key supplier to some of the world’s most renowned fragrance houses. Today, while production methods have modernised, Grasse remains deeply connected to its heritage, with its ateliers and perfumeries continuing to define both the town and its global identity.</image:caption>

The architecture is entwined with the offering of shops, restaurants and cafés, squares and churches. It’s the quieter spots, away from the main streets and squares, which bring the character of the city to life. Starting at Place du Cours Honoré-Cresp, with its spectacular views over the Riviera, you immediately begin to understand the scale of the city and wider region. It is also next to the Musée International de la Parfumerie (International Museum of Perfume), which provides not only a unique history of Grasse and its perfume production, but also how it has grown into the worldwide industry it is today.</image:caption>

<image:caption>Following on from there, there are numerous streets and alleyways to be explored, with most housing boutiques, shops selling local produce and cafés. Some streets to note are Rue Jean Ossola for shopping at Fragonard, Rue Gazan for the splendid Cathédrale Notre-Dame-du-Puy, and Place du Grand Puy for the viewpoint overlooking the eastern part of the city and surrounding area. However, the most notable of all places is Place aux Aires, which acts as the epicentre of Grasse’s old town. This vibrant square offers numerous cafés and other eateries which spill out onto the square, creating a communal atmosphere. The buildings are colourful and vibrant, adding to the appeal and aesthetic of the space. On market days, particularly Saturday mornings, the square is enhanced further with stalls selling the finest produce of Provence. It is also home to many of Grasse’s perfume houses and ateliers, further enhancing its history and significance.</image:caption>

<image:caption>If there is one experience in Grasse that defines the visit, it is attending an atelier to make a bespoke perfume. The workshop offered by the Molinard perfume house is an excellent option to explore this experience in full. The workshop, housed on the second floor of the Molinard Grasse Centre, is a large space with dedicated tables set up for the class. A dedicated Molinard ambassador will lead the workshop by explaining all aspects of the process, from sampling fragrances to the final selection and quantities. The most important part of the experience is the sampling of scents and understanding the base, heart and top notes that will ultimately create the perfect signature fragrance. One of the most unique features is that you are involved in the mixing of the fragrance itself, by measuring the amounts of each scent into the bottle to take away with you. A record of your creation is retained by Molinard and a reorder of the fragrance can be made later, so that the creation can live on well after the experience has concluded.</image:caption>

<image:caption>Eating well when in Grasse should complement your day instead of being an anchor around which you build everything else. The best food and drink while visiting can be an unplanned stop at many of the cafés and bistros that line the streets and squares. In particular, Place aux Aires has some excellent choices to stop by, grab coffee and a light bite whilst sitting outdoors and absorbing the atmosphere. There is also a selection of local shops and bakeries selling food that can be consumed on the go. However, for the best experience, a café or bistro is the most considered option.</image:caption>

<image:caption>Before visiting Grasse, plan your experiences in advance and make reservations with ateliers beforehand to avoid disappointment. This is particularly important in the summer when the volume of visitors is higher. Allow sufficient time in your day for travelling to and from Grasse, as it is located a little away from most Riviera towns and resorts. Trains tend to run on an hourly frequency, so it is important to consider this in advance. Walking around the historic centre does require multiple hills, steps and uneven paths, so appropriate footwear is recommended for the visit. If it is raining, this may present some challenges, so always check the forecast in advance, especially if visiting off-season. The city is located at a higher altitude than most other parts of the Riviera, so factor in appropriate outerwear in the winter and ensure sun protection in the summer. P&M tip: If you have time after your visit to Grasse, stop by the nearby hilltop town of Mougins for a full panoramic view of the region. It will not disappoint.</image:caption>

<image:caption>Who this is for This Edit will work for those who want to visit a Provençal city where culture, history and dining are all combined into one experience, without the need for a fast pace or over-thinking before arrival. It will reward those who want to book one or two experiences and leave the rest of the plan free for exploring the best of what the city has to offer. If you are looking to plan your stay for this trip, read our Edit which reviews Château de la Gaude, located about 4 miles north of the city centre. The standard Every recommendation below earns its place on the same five points: service, design, food and drink, atmosphere and value. Value is not about cheap or expensive. It is whether the experience earns the price paid.</image:caption>

<image:caption>To the north of the main market area at Place Richelme is the Hôtel de Ville, or town hall, which is a must-see monument before moving on. No visit to a Provençal town is complete without purchasing lavender and herbs, and Rue Gaston de Saporta is the place to be. Here, multiple lavender, soap and Provençal shops are located. At the northern end of Rue Gaston de Saporta sits the historic Paroisse Cathédrale Saint-Sauveur, whose origins date back to the 5th century. The interior architecture is something to marvel at, considering it has three distinctive naves, combining three distinctive periods: Romanesque, Gothic and Baroque.</image:caption>

<image:caption>Lunchtime will approach quicker than you may imagine, especially after a morning exploring the historic centre. The best place to head around lunch hour is Cours Mirabeau, the widest boulevard in the city where many shops, restaurants and cafés are located. The culinary highlights on the boulevard include Les Deux Garçons, which was founded in 1792 and serves traditional French cuisine. However, for those who prefer a lighter lunchtime offering, other options include Restaurant Le Mirabeau, where lighter dishes are available and a terrace looking onto the boulevard offers diners the opportunity to enjoy the goings-on of the street. The latter part of the afternoon should then be left open for exploring the streets at leisure. Cours Mirabeau and the surrounding streets offer some of the better-known brands and fashion houses for considered shoppong. Rue Espariat, to the north of Cours Mirabeau, combines shopping with further historical sites and fountains such as Place d’Albertas. A stop by the Boutique Aroma-Zone, located in the historic Hôtel particulier Boyer d’Éguilles, is not to be missed, even if just to view the impressive collection of beauty products for sale and the workshops housed within.</image:caption>

Here, you will be introduced to the life of the mansion’s previous inhabitants, including Pauline de Caumont, who left her mark on the property. <image:caption>Within close proximity is one of the most famous fountains in the city, located at Place des Quatre-Dauphins, otherwise known in English as the Four Dolphins Fountain. It is very much worth the visit and acts as a midway point en route to the Musée Granet, which houses some of the finest examples of works by Cézanne and other masters of European painting. First opened in 1838, it is housed within the former Priory of the Knights of Malta and also brings together prized works by Picasso, Rembrandt and Ingres. Both of these cultural sites should be experienced over the course of an afternoon to ensure ample time to enjoy them properly. Should time permit, the nearby Rue d’Italie offers some excellent shopping opportunities. Rather aptly, items such as truffles at Signorini Tartufi and calissons from Brémond, which are a necessity when in Aix, can be found. Together, this forms a well-rounded second day away from the hustle and bustle of the historic centre.</image:caption>

<image:caption>Aix-en-Provence over two days can be overwhelming if over-planned. Therefore, it is best explored with one to two pre-planned activities. Whilst the city is small, it has many streets and areas that overlap, which can become confusing, therefore using the first day to explore and calibrate, is important. This is particularly useful as you may find streets, shops or cafés that you wish to return to and explore further later. The second day is best spent visiting the famed galleries and houses, which will make your previous day’s exploring make more sense.</image:caption>

<image:caption>Who this is for This Edit is for travellers interested in a more integrated hotel experience, one that moves beyond the basics of bed and board. Travel in the South of France can quickly become crowded with options and competing priorities. Here, the aim is not to do everything, but to understand which parts of the property are most worth prioritising. The experience works well when approached selectively. One strong dining reservation alongside one well-chosen activity can be enough to reveal how the property operates and what it does particularly well. The standard Every recommendation in this Edit is assessed against the same five points: service, design, food and drink, atmosphere and value. Value is not about cheap or expensive. <image:caption>Arrival at Château de la Gaude does not immediately reveal the full scale of the property. That is something that unfolds over the course of the stay and it is part of what gives the experience its quiet sense of discovery. The hotel is arranged across several buildings, which helps the architecture remain consistent with its origins rather than feeling overworked or expanded too heavily. Reception is conveniently positioned close to the car park, and the welcome from staff is immediate and well handled. From there, the route leads naturally into the boutique, where the estate’s wines and produce are displayed, setting the tone for what follows. Depending on the location of the room, guests are either shown directly on foot or taken by golf cart across the estate. This is particularly useful for rooms positioned closer to the spa and vineyards, where the distance from reception begins to emphasise the scale of the property.</image:caption>

<image:caption>On this occasion, the stay was for three nights in a Duplex Suite, offering a minimum of 60 square metres of space across two floors. The suite overlooked the château and included two toilets, one on each floor, as well as a separate shower room on the upper level. The high ceilings on both floors add a sense of scale and airiness that would be particularly appreciated in the height of the Provençal summer. Air conditioning is also available throughout the suite, which adds further comfort. Downstairs, there is a generous living space with an oversized sofa and two armchairs, while a small dining table with two chairs completes the room. A separate cloakroom houses the tea and coffee facilities alongside additional storage. Upstairs is the bedroom, arranged as an open-plan space where a beautifully constructed storage unit divides the room and serves both as storage and as a headboard for the bed.</image:caption>

<image:caption>The suite also embraces more modern touches, with an integrated iPad providing details about the property. Guerlain amenities are used in the bathroom, which is a strong choice for the hotel and reflects the level of attention given to the stay. The décor is well judged throughout, with mirrors, artwork and carefully placed lighting creating a warm and modern aesthetic within the classic architectural framework. On the ground floor, large French doors open onto a small patio area. On this occasion, no outdoor furniture was in place, most likely due to the season of the visit. Upstairs, two large windows overlook the château and the outdoor dining space of La Source, which adds to the sense of calm and Provençal character. The room was consistently well appointed and turndown service was offered. While some minor issues were experienced during the stay, these were resolved quickly by the attentive reception team, which reflected well on both the service standards and the wider commitment to the guest experience.</image:caption>

<image:caption>The property is extensive and brings together historic buildings, formal gardens, vineyards, a spa and a heated outdoor pool, which closes in the off-season. There is more than enough space to walk and explore without ever needing to leave the estate. Spring in Provence introduces a colour palette that works beautifully against both the landscape and the architecture. In front of the château, a carefully laid out garden descends towards the vineyards. There are mazes, quieter corners to pause and take in the surroundings, and spaces that allow the artworks across the grounds to be appreciated properly. The estate feels designed to be moved through slowly, rather than simply looked at. The outdoor dining area at La Source is also a particularly strong place to pause in the late afternoon before the evening begins. In spring, sitting outside allows the grounds to be appreciated as the light gradually shifts across the property.</image:caption>

<image:caption>One experience not to be missed, whether staying at the property or simply visiting, is a private tour and tasting in La Cave. Located just off Le K restaurant, the cave houses the estate’s impressive wine collection, made up of thousands of bottles that can be served across the property’s restaurants or purchased directly. A large leather-bound wine bible contains the full breadth of the offering. A private tasting of the vintages produced by the château is an excellent way to understand the diversity of the vineyard’s output. It also gives the wider property more context, grounding the stay in the wine that helps define it. A tour of the winery, located beside La Source, adds another layer. Seeing how the wines are produced, including the use of clay vessels for some vintages, makes the experience feel more distinctive and rooted in place. It is one of the clearest ways to understand both the property itself and the wider culture of the region.</image:caption>

<image:caption>Le Art is a restaurant that creates anticipation from the moment you first step onto the property. As the wider offering begins to reveal itself and the setting establishes the right backdrop for a serious culinary experience, Le Art becomes the point at which everything comes together. It feels like the restaurant that best summarises the ambition of the estate. It is also the clearest expression of what the property is trying to achieve. Set across two dining rooms, the restaurant offers two distinct perspectives. One provides a full view of the chefs’ stations, while the second leans more heavily into atmosphere, with lighting that feels as considered and performative as the food itself. Under chef Matthieu Dérible, two tasting menus are offered during evening service, with six- and eight-course options available. On this occasion, the eight-course menu was taken alongside a wine pairing that highlighted the best of the region.</image:caption>

<image:caption>The evening begins with champagne and a series of canapés, presented on a stand shaped like a tree. The lighting in the room and the design of the presentation combine to create the impression of being within a forest, which feels distinctive and specific to the restaurant. From there, the rhythm of the meal continues through a sequence of dishes including spiced mullet, potato topped with Royal Ossetra caviar, trout, red mullet and veal sweetbread, lamb served with artichokes, and a closing dessert of strawberries with almonds. The range of produce and the variation in approach create a sense of progression that keeps the palate engaged as the evening unfolds. Service is refined and consistent throughout. Each course is introduced with clarity and enough explanation to deepen the experience without interrupting its pace. The tone is recognisably French and formal, yet still aligned with the wider character of the property. By the close of the evening, there is a clear sense of completeness, reinforced by a parting gift that rounds off the experience well.</image:caption>

<image:caption>Not mentioning the other two restaurants on the property would be an oversight, given the settings and culinary offering they each provide. Located beside one another, they offer two clearly different experiences that broaden the stay and strengthen the overall appeal of the estate. La Source takes its name from the water source pool around which the restaurant is built. It is a distinctive setting and not one easily compared with other restaurants in Provence. Although it is not in use, the source itself gives the space a sense of occasion. The restaurant also serves as the all-day dining venue for the property, hosting breakfast, lunch and dinner, with a bar area that can be used throughout the day. Le K offers something quite different, centred around Japanese cuisine. It is the most modern restaurant on the estate, with an ornamental full-size helicopter dominating the main dining room and creating a setting that feels closer to a large city than the Provençal countryside. Asian dishes are served alongside cocktails prepared at the dedicated bar, helping to round out the broader culinary identity of the property.</image:caption>

<image:caption>A stay at Château de la Gaude takes shape over time rather than in a single day. Over the course of three nights, the different elements of the property begin to connect and that is where the experience feels strongest. If dining across the estate is a priority, it is easy to build the evenings around the property itself. Ideally, Le Art should sit at the centre of the stay, allowing time beforehand to understand the setting and the wider rhythm of the estate, both of which deepen the restaurant’s impact. La Source works well as a first-night dinner, while Le K provides a more contemporary contrast later in the stay. The wine tasting or spa experience should also form part of the structure and is best placed on the second or third day, when the pace of the stay has already settled. Time on foot through the grounds is equally important and should not be left until the final moments. The property rewards a slower approach, so take time, shape the stay carefully and ask the staff for recommendations where useful.</image:caption>

<image:caption>Who this is for This Edit suits the discerning traveller who wants to explore the South of France at their own pace and cadence. It works particularly well for those who value the flexibility to build a multi-city itinerary rather than remain tied to a single base. It is also well suited to those who prefer the journey itself to feel like part of the trip, rather than simply the means of getting there. By combining air and rail, the route creates a more measured and varied way to reach the region. The standard Every recommendation in this Edit is assessed against the same five points: service, design, food and drink, atmosphere and value. Value is not about cheap or expensive. It is whether the experience earns the time and price invested.</image:caption>

<image:caption>British Airways operates flights from Heathrow Terminal 5 to Marseille. We have previously featured the pre-departure experience at Heathrow Terminal 3 in a separate Edit, but for this journey the focus remains on the onboard Club Europe experience itself. A British Airways Club Europe ticket provides a dedicated cabin at the front of the aircraft, with the middle seat left vacant between the window and aisle. This creates a greater sense of space on what is, ultimately, a relatively short sector. On this occasion, the service on board was warm, professional and notably relaxed. British Airways crews can often be one of the airline’s strongest assets and that was certainly the case here. Complimentary drinks, including champagne, were offered from the bar, followed by a meal service consisting of a main dish and dessert. Catering from Heathrow is provided by Do & Co and is widely regarded as among the strongest in European short-haul premium cabins.</image:caption>

<image:caption>Service began shortly after take-off with a drink and a light snack of Belazu salted rosemary snack mix. Dinner followed promptly after this service was completed. On this flight, the cold main dish consisted of hot smoked salmon served with salad, followed by a light mousse for dessert. Tea or coffee was offered after the meal, though those preferring another beverage were equally well accommodated. Overall, for a flight of around one and a half hours, the service felt smooth and well paced, even with a moderately sized Club Europe cabin.</image:caption>

<image:caption>No matter how you choose to spend your time in Marseille and the surrounding region, the most considered way to travel along the Riviera is by rail. TGV INOUI operates services from Marseille to Nice, often as a continuation of routes that originate in Paris Gare de Lyon, creating a seamless north-to-south connection into the South of France. While the journey can be taken in either Standard (2ème Classe) or First Class (1ère Classe), the most refined experience is found in Optimum, which sits at the upper end of First Class. It is not a separate carriage, but a higher fare tier that offers greater flexibility and a more composed onboard environment. Optimum provides a quieter cabin, with seating arranged in a 2+1 layout. There is a mix of table seating and individual airline-style seats, with a central pair of seats ideal for those travelling together. Luggage is self-managed, but generous allowances make this straightforward in practice. Up to two larger suitcases and one piece of hand luggage can be accommodated, with dedicated racks at the ends of the carriage and overhead storage for smaller items.</image:caption>

<image:caption>Flying British Airways from Nice back to London is one of the more considered and adaptable options for the return journey. With multiple daily departures to Heathrow, Gatwick and London City, it provides a level of flexibility that is particularly valuable, especially in the event of disruption. British Airways operates from Terminal 1 at Nice Airport. While not the most modern or architecturally refined terminal, it is functional and easy to navigate. Of particular note is the lounge offering in the non-Schengen area, from which UK flights depart. The Canopy VIP Lounge is spacious and well laid out, with a combination of seating areas and a buffet offering both hot and cold options. There is a solid selection of soft and alcoholic drinks available, though champagne is not typically offered. Boarding at Nice Terminal 1 is orderly, with group boarding clearly enforced. Club Europe passengers are therefore among the first to board, allowing for a smoother transition onto the aircraft.</image:caption>

<image:title>Edits - Heathrow Terminal 3 | A Considered Lounge Experience - Image: Bespoke cocktail at the Centurion Lounge. © 2026 Palates & Miles</image:title>
<image:caption>Arrival at the Centurion Lounge is via stairs or lift from the main concourse. Clear signage leads to the reception desk, where a friendly team is on hand to welcome guests. Access is reserved for Centurion and Platinum cardholders, typically with up to two guests per cardholder, though it is always worth checking the exact criteria in advance as this can vary depending on the country of card issue. Once inside, the sleek and modern design is immediately apparent. While there is no natural light, the considered lighting and artwork create an environment that still feels warm and composed. The bar area is the clear focal point of the lounge and, for several reasons, becomes the strongest part of the experience. Here, specially created cocktails and a full range of drinks are prepared by the bartenders. It is worth noting that, aside from tea and coffee, there is no self-service drinks area. For those looking for a quieter place to sit, the second room beyond the main bar offers a calmer setting, with a mix of sofas, group seating and smaller booths.</image:caption>

<image:caption>In the early evening, a wide selection of hot and cold food was available from the buffet area to the right of the bar. Dishes such as festive chicken, harissa roasted carrots and Mexican chipotle beans featured on the hot side, while finger sandwiches, kale and freekeh salad and crispy pitta bread formed part of the cold offering. It may not be the most extensive food selection in Terminal 3, but it comfortably exceeds what is typically found in most independent airport lounges.</image:caption>

<image:caption>Service in the lounge is friendly, courteous and accommodating without becoming overbearing. The bar staff are happy to explain the signature cocktail list and make recommendations where needed. Service remained quick and composed throughout, which is particularly important during the busier points of the evening. Also notable was the attention given to the buffet, with dishes replenished promptly as required. The overall atmosphere of the Centurion Lounge is one of sophistication and practicality. Its unfussy approach makes it particularly well suited to a shorter pre-flight stop, or as an opening visit before moving on to another lounge with a stronger dining proposition. The dress code leans smart casual, which feels in keeping with the design and overall tone of the space.</image:caption>

<image:title>Edits - Heathrow Terminal 3 | A Considered Lounge Experience - Image: Classic cocktails at the Cathay Pacific Business Class Lounge. © 2026 Palates & Miles</image:title>
<image:caption>Finding your way to the Cathay Pacific Lounge is straightforward, particularly if coming from the Centurion Lounge or the main shopping area. The entrance sits between the Qantas Lounge and Gate 11. A lift then takes you up to the shared reception area for both the Business Class and First Class lounges. Access to the Business Class Lounge is reserved for Business Class passengers flying on a oneworld airline from Terminal 3, as well as oneworld Sapphire and Emerald members and their guests. Cathay Pacific may also permit some passengers to purchase access in advance via its website, though this should always be checked beforehand. As with all lounges, it is best to confirm the access criteria before visiting to avoid disappointment. Once inside, the first thing that catches the eye is the large noodle bar on the right. Beyond this, generous seating and dining areas extend the full length of the lounge. Large windows overlooking the apron bring in natural light and help the space feel open and inviting, even when busy. The bar sits further towards the back of the lounge, where the seating shifts to sofas, armchairs and booths. This creates a more relaxed zone away from the main dining area and is arguably the best place to settle before a flight.</image:caption>

<image:caption>The food offering is what most clearly sets this lounge apart from others in the terminal. The noodle bar serves freshly prepared noodle dishes, dumplings and bao. Orders are placed directly at the counter, after which guests are given a small buzzer that notifies them when the food is ready for collection. It is an efficient and well-considered system that avoids crowding around the bar. Preparation times typically run between ten and fifteen minutes, though this depends on how busy the lounge is at the time. There is also a second food hall area to the left of the noodle bar, where a selection of prepared Asian dishes is available if time is limited. The bar offers a wide range of wines, spirits, cocktails, tea and coffee. Signature drinks include the Cathay Delight and Orange Dream, while classics such as a Negroni, Martini or Margarita are also available. Champagne is offered in the form of Laytons Brut Reserve, which feels appropriately chosen for the setting.</image:caption>

<image:caption>This Edit is for those looking for something more unexpected when visiting the west of Ireland. Ōku is best experienced as a reward after a day spent on the estate, in Adare village or exploring the surrounding region. It restores and resets, while also drawing attention to the precision and craft of chef Jan Vincent Amo’s creations. This is not a restaurant for those seeking traditional Irish fare. It is for diners looking for something refined, immersive and outward-looking.</image:caption>

<image:caption>Arriving through the manicured entrance to Adare Manor is always a step into a world that combines tradition with highly polished modern hospitality. The concierge team at the gates offer a warm welcome and direct guests towards Ōku, located within The Carriage House. Arrival at The Carriage House, while less formal than entering the Manor House itself, still feels refined and elevated. The building serves a dual purpose as clubhouse for the golf course and as an additional dining destination on the estate. Because Ōku is such a new opening, there is also a small sense of anticipation for returning guests as they work out exactly where the restaurant is located. That uncertainty, briefly, adds to the experience.</image:caption>

<image:caption>Once past the bar and into Ōku’s dedicated entrance corridor, the mood changes immediately. The transition is striking. What felt implausible only moments earlier in the Irish countryside suddenly makes complete sense. A wall of Japanese spirits greets on arrival before the room opens into a small but intentionally curated dining space. Six tables sit carefully placed around the perimeter, all facing the central kitchen counter where chef Amo works in full view. Most tables comfortably seat four, with one larger arrangement accommodating up to six. The interior combines lighter and richer browns across walls, furniture and finishes, with stone, leather and textured surfaces adding depth from every angle. The most striking feature is the large window running the length of the room, drawing in evening light and opening out onto the manicured grounds and golf course beyond. The greeting from chef Amo at his station on arrival is also a distinctive touch and sets the right tone before ordering even begins.</image:caption>

<image:caption>The menu is intentionally light, refined and easy to understand. Even for those new to Japanese cuisine, it is immediately clear how to approach it. The structure is clean: sushi on one side, then hot and cold appetisers that can easily form the heart of the meal. The sushi offering is divided between sashimi, nigiri and rolls. There is a strong range of sashimi and nigiri, with a chef’s nigiri selection for those wanting breadth and variety. The roll section is equally compelling, with the wagyu roll standing out for anyone looking for something more distinctive.</image:caption>

<image:caption>The appetiser offering is what lifts the experience beyond sushi alone. The cold selection is well judged, but it is the warm dishes that give the menu greater range and ambition. The truffled wagyu on wok-fried rice is one such example. The miso black cod is another and already feels like the dish most likely to define the restaurant in its early months. The cocktail menu also complements the food well. The Sakura Negroni offers a strong and memorable opening, while the Wasabi Martini, built around vodka, gin, wasabi and lemon, makes a persuasive case against returning to a standard dirty martini. Taken together, the proposition feels closer to London’s Soho or Manhattan’s East Village than to Adare. That is exactly what gives it its edge.</image:caption>

<image:caption>The flow of the experience is what makes Ōku worth the investment. A hot towel infused with rosemary opens the evening, followed by edamame and a palate cleanser. From there, once the ordering is done, attention naturally turns to the kitchen. Rhythm is central to how the experience works. Sushi is prepared at the front of the counter, hot dishes towards the back. That choreography gives the meal a sense of progression and purpose. Particularly memorable is the flamed wagyu and the ceremony that surrounds its preparation. When the dishes reach the table, the contrast between the colour of the food and the darker stone surface is immediate and effective. Presentation feels vivid and composed without becoming overly theatrical. Even before the first bite, there is a clear sense that the experience has been carefully thought through. The desserts then bring the meal to a close in a way that feels properly structured and complete.</image:caption>

<image:caption>The small scale of the room creates an intimacy that works strongly in Ōku’s favour. The way the light changes from sunset into evening is particularly noticeable, and it is after dark that the space fully settles into itself. Even when full, the room does not become noisy or oppressive. The design allows the kitchen to remain visible without dominating the experience, and the atmosphere feels immersive without becoming performative. This is also a restaurant that encourages dressing well. Smart casual feels entirely appropriate, but a more fashion-forward approach would not feel out of place either. The room’s boldness can carry it. P&M tip: Request the table in the corner between the window and the front edge of the kitchen counter. It offers the strongest balance of exterior view and kitchen perspective and gives the room its fullest expression.</image:caption>

<image:caption>The Extra ME+ Junior Suite works well for a one-night stay, as it creates a clear separation between sleeping, living and dressing space. The overall layout is well proportioned. A small but considered lounge area welcomes you into the room, with a sofa positioned opposite the TV console. It provides a natural place to settle on arrival or to relax later in the evening. There is also a compact desk area, which serves equally well as a workspace or a preparation space before the evening. On this occasion, a bottle of English sparkling wine and a light selection of sweet bites were waiting in the room. <image:caption>The rooftop at ME London is a defining feature of the stay. Located at the top of the hotel, Radio Rooftop Bar combines panoramic views across London with a menu built around small plates and lighter dining. The offering leans towards Asian-inspired dishes, including sushi, skewers and sharing plates designed to complement drinks rather than replace a full dining experience. In winter and spring, the rooftop is covered and heated, creating a comfortable indoor-outdoor environment. The views remain strong, though naturally more contained. In summer, the space fully opens, revealing uninterrupted views across the city. On this visit, the meal remained intentionally light and restorative. Dishes arrived well presented and easy to share, allowing the focus to remain on the setting rather than the structure of a formal dinner. Service is friendly, consistent and paced to match the environment. It is attentive without interrupting the flow of the evening or reducing the experience to a transactional one.</image:caption>

<image:caption>Arriving at Beau-Rivage Palace is impressive and feels like entering an exclusive enclave detached from the surrounding city. The hotel sits directly on the waterfront in Ouchy, with gardens stretching towards the promenade and the lake itself. The lobby immediately evokes a grand European palace hotel, with high ceilings and generous corridors leading to the different wings of the property. The opulent design creates an atmosphere that feels composed rather than theatrical. Check-in is warm and efficient. Staff are welcoming in that distinctly Swiss manner, ensuring guests feel comfortable from the first moments of arrival. If your room is not yet ready, you may be offered a drink in the lobby lounge while waiting. A member of the reception team may also offer a brief introduction to the hotel and its facilities before escorting you to your room.</image:caption>

<image:caption>For this stay, the room category was a Superior Lake View Room, which did not disappoint in either comfort or style. The defining feature is, unsurprisingly, the view. Large balcony doors open to sweeping views across Lac Léman, with the French Alps clearly visible across the water. Throughout the day the lake becomes a constant presence: early morning light reflecting off the surface, boats moving steadily across the water and sunsets colouring the mountains in the distance. Each passing hour offers a different perspective and simply spending time admiring the view becomes reason enough to stay here. Inside, the room balances classic European hotel design with modern comfort. The layout feels spacious without being oversized. Carefully arranged furnishings make the most of the footprint, with a small seating area positioned to take advantage of the lake view. The bathroom follows the same philosophy. Marble finishes, a deep bathtub and a window (with a sliding screen for privacy) toward the bedroom allow the lake views to remain part of the experience. Thoughtful lighting completes a space that feels measured and appropriate for a hotel of this stature. Over several nights the room begins to feel less like accommodation and more like a private vantage point over the lake.</image:caption>

<image:caption>Café Beau-Rivage provides the hotel’s traditional Swiss dining experience and works particularly well early in a stay. It allows guests to begin exploring the hotel’s culinary offering immediately and provides the opportunity to pass through the historic Wall of Fame gallery (pictured above) leading to the restaurant from the main lobby. The restaurant is also popular with well-heeled locals, which gives the space a sense of purpose often lacking in hotel dining rooms. The menu draws from both French and Swiss culinary traditions and the dining room overlooks the lakeside promenade. If you want to make the most of the setting, book an early evening reservation for the best light and request a window table. Service is polished and in line with Swiss standards, without feeling overly formal. This ensures the meal can be enjoyed at a relaxed pace after a day travelling or exploring Lausanne.</image:caption>

<image:caption>Lausanne is a historic city that has adapted well to modern life. The Olympic Museum, located within walking distance of Beau-Rivage Palace, provides one of the city’s most distinctive cultural experiences. Even visitors with only a casual interest in sport tend to find the museum engaging thanks to its thoughtful design and global perspective. It is also an excellent spot for a casual lunch, best enjoyed on the terrace at the Olympic Museum Restaurant. Separately, the old town above the lake offers a different atmosphere entirely. The Lausanne Cathedral and the nearby Musée Cantonal des Beaux-Arts provide a quieter cultural counterpoint to the waterfront. Exploring the cobbled streets, independent shops and local chocolatiers is an afternoon well spent.</image:caption>

<image:caption>One of the most worthwhile experiences during a stay in Lausanne is boarding one of the Belle Époque paddle steamers operating on Lac Léman (Lake Geneva). Departing from Ouchy harbour, these historic vessels glide slowly across the lake, calling at towns and villages along the shoreline. The journey reveals vineyards, villages and Alpine landscapes best appreciated from the water. Perhaps most striking is how many locals also use the service for leisure, which speaks to the quality of life in the region. The harbour sits only a short walk from Beau-Rivage Palace, making this excursion particularly easy to include during a multi-day stay.</image:caption>

<image:caption>Première Signature is the highest service level offered on TGV Lyria and the difference is immediately noticeable. Seats are arranged in a 1+2 configuration with generous spacing and the cabin feels quieter and more composed than the other classes. Première also has a similar layout, but those carriages tend to be busier and do not come with the same level of service. The Première Signature cabin is reserved specifically for passengers holding that ticket, which results in fewer passengers and a calmer pace. Seats recline comfortably for the three-hour journey and provide enough personal space to work, read or simply watch the landscape shift from urban France to open countryside and eventually the alpine edge of Switzerland. Luggage storage is located at the end of the carriage, while smaller bags can be placed above the seats. There is no need to rush, as space is generally sufficient even when the cabin is busier.</image:caption>

<image:title>Edits - TGV Lyria Première Signature: Paris to Lausanne - Image: Dining on board Première Signature. © 2026 Palates & Miles</image:title>
<image:caption>Dining is where Première Signature properly distinguishes itself, with menus developed by chefs Michel Roth and Danny Khezzar. This is what makes the step up from Première feel worthwhile. Shortly after departure, tablecloths are laid and service begins with drinks. Champagne, wine and non-alcoholic options are offered, followed by a multi-course meal served directly at your seat. The menu changes seasonally and tends to lean towards French culinary traditions. Expect a starter, main course and dessert presented on a well-considered tray. On this journey, the starter was a delicate cucumber and raw beet salad. The main course was gratin dauphinois, followed by a cheese course and a closing dessert of chocolate and raspberry entremets. The experience feels closer to restaurant dining than conventional train catering. Service is measured, the dishes are designed to work together and the overall meal satisfies without ever feeling overindulgent.</image:caption>

<image:title>Edits - Aer Lingus Business Class Shannon to New York JFK - Image: Throne seat on Aer Lingus A321LR. © 2026 Palates & Miles</image:title>
<image:caption>This route is operated by the A321LR, a narrow-body aircraft configured for long-haul efficiency. The Business Class cabin feels intimate rather than expansive, with 16 seats in total and this works in its favour. Seating is arranged in a mix of 2+2 pairs and 1+1 throne seats. The throne seats are the clear choice on this aircraft. If you are travelling with a companion, booking two thrones across the aisle can feel surprisingly private and gives you space that reads closer to long-haul Business Class than you would expect on a narrow-body. The seat itself is generous, with storage that makes the cabin feel more considered than the footprint suggests. There is a dedicated compartment beside the aisle that holds personal items securely and out of sight and the overhead bins are large enough for cabin suitcases. That matters on a daytime westbound flight, where you want to keep bedding out of the way and your space tidy. On boarding, you are met with a pillow and a solid blanket. It is not the most elaborate transatlantic set-up, but it is more than adequate for the East Coast crossing. An Aer Lingus amenity kit is provided with Jo Browne products, plus one of the better eye masks currently doing the rounds in Business Class. Water is already at the seat, stored in a dedicated space beside the reading light, which keeps the area feeling organised.</image:caption>

<image:caption>Service begins shortly after departure, once the cabin has settled, with drinks and a light opening bite. The beverage offering is strong by transatlantic standards, with champagne, premium spirits and a few smart modern additions. Whitebox Cocktails in particular feel like a considered touch, more polished than a novelty, and well suited to a daytime crossing. While this December flight had subtle festive accents, the structure stayed true to Aer Lingus Business Class: a composed three-course service. Orders were taken shortly after take-off, with crew working by AerClub status before moving through the cabin. It is a small detail, but it signals a quiet reward for frequent flyers and keeps the service feeling intentional rather than rushed.</image:caption>

<image:title>Edits - A Weekend at Lucknam Park, Explored - Image: Junior Suite at Lucknam Park. © 2026 Palates & Miles</image:title>
<image:caption>Your room matters here because it becomes the quiet centre of the weekend. Choose a category that lets you properly settle, not simply sleep. A strong Lucknam room should feel layered rather than minimal, with the kind of calm that slows you down the moment you close the door. If you are deciding where to spend, prioritise light, proportions and privacy. A view over the grounds earns its place, particularly in the morning before breakfast, when the property feels at its most still. Manor rooms are well appointed, but a Junior Suite in the outer houses offers a stronger sense of escapism and privacy. P&M note: Keep the room as part of the ritual. One uninterrupted hour to read, reset, or do nothing is not wasted time here. It is the point.</image:caption>

<image:title>Edits - A Weekend at Lucknam Park, Explored - Image: Dining Room at Restaurant Hywel Jones. © 2026 Palates & Miles</image:title>
<image:caption>This is the anchor reservation and the moment to dress with intention. The room holds its confidence quietly following a recent renovation. Service is precise without theatre and the pacing encourages you to stay present a little longer. Treat this as the main event, not a meal to fit around other plans. Booking note: Reserve in advance and request a table that feels settled, away from the main flow of the room. A later sitting is worth considering after a calm aperitif, so the evening begins with intention rather than haste. Once the initial wave passes, the room softens and you gain a sense of private dining. The meal is delivered as a tasting menu under Hywel Jones, with local flair and polish. It is the kind of cooking that earns its Michelin star through control of rhythm rather than spectacle. P&M note: Speak with the sommelier early. A considered pairing, or a single well chosen bottle, will shape the arc of the evening.</image:caption>

<image:caption>Breakfast in the Walled Garden Restaurant is the right morning reset. The setting feels lighter, more modern and relaxed, with the sense of the day opening rather than abruptly starting. The Full English is the natural choice here, executed with confidence and supported by seasonal dishes that draw on local produce. On busier mornings the room can feel energetic, so aim for an earlier sitting if you want the experience to remain calm and unhurried. The first service often feels most in keeping with the property’s overall rhythm. P&M tip: Protect the first hour after breakfast. No calls, no rushing, no fixed plan beyond a slow walk through the grounds or a considered visit to the spa.</image:caption>

<image:caption>Afternoon tea is the closing ritual. It brings the weekend back indoors into warmth and calm and it is the cleanest transition into departure. Choose a table that feels tucked away rather than centre stage. Tea works here because it is unhurried and paired with produce that feels fresh and considered. If you are choosing one final indulgence before leaving, this is the one that lands best. P&M tip: Book tea for mid afternoon, not late. Leave with daylight and the sense that you stopped at the right moment.</image:caption>

<image:title>Edits - Eurostar Premier Edit - Image: Champagne in the Eurostar Premier Lounge, St Pancras. © 2026 Palates & Miles</image:title>
<image:caption>The Eurostar lounge is where Premier becomes more than just a travel class. The space is quiet enough to allow you to reset, with a clear separation from the main concourse. Seating is comfortable, the lighting is good and the best spots are those slightly away from the central flow, where you can settle without feeling like you are on display. A practical note for morning departures. Once breakfast service finishes, the food offering can feel thin. If you are travelling after the breakfast window, do not expect a substantial spread. Treat the lounge as a place for a drink, a calm pause and a moment to organise yourself rather than somewhere to rely on for a full meal. A glass of Champagne sets the tone. If you want the journey to feel like a first chapter rather than a commute, take a glass in the lounge and let it mark the start of your trip. If you prefer something lighter, tea, coffee and other soft drinks are available. P&M tip: If breakfast will be finished by the time you arrive, eat beforehand or carry a small snack, then use the lounge as a resting spot before boarding.</image:caption>

<image:title>Edits - Eurostar Premier Edit - Image: Main course served in Eurostar Premier. © 2026 Palates & Miles</image:title>
<image:caption>Eurostar Premier gets food and drink broadly right when you treat it as part of the journey, not the headline. The programme is curated with intent, with menus developed under Eurostar’s Premier dining concept led by chef Jeremy Chan, desserts by Jessica Préalpato and drinks from head sommelier Honey Spencer. On this journey, the chicken hot option was the correct choice for a late morning departure. Warm, straightforward and easy to eat without turning the table into a project, it does its job and lets the rest of the service on board carry the experience. Trays arrive cleanly presented, portions are sensible and the pacing is calm. The supporting details matter more than the individual dishes. A small amuse-bouche to open, a main course that holds its own and a simple dessert to finish without full dining-room theatre. It is premium rail catering crafted with restraint and that is the point.</image:caption>

<image:caption>When you move through to Dinner, keep the order simple and confident. Begin with the Hay Smoked Trout. It delivers restraint and theatre in equal measure and sets the tone without heaviness. For the main, the Prime Rib for two brings occasion without excess. It is the right kind of centrepiece, especially if you want the evening to feel like a single chapter rather than a sequence of courses. Finish with the Tipsy Cake. It is the signature worth leaving space for and the best way to close the meal without overcomplicating the ending. <image:caption>Dining in the Paul Hamlyn Hall transforms an afternoon at the Royal Opera House into an occasion worth repeating. Your dedicated table, laid with white linen, is yours before the curtain rises and during each interval (usually 25 to 30 minutes). What would normally be logistical pauses becomes part of the afternoon’s rhythm. Courses can be paced to your preference, so you return to your seat satisfied rather than rushed.</image:caption>

<image:caption>Pre-ordering is essential and can be done online or over the phone ahead of the day. The kitchen caters specifically to what has been ordered, so do not expect to decide on the day. Give this part proper attention in advance to make the most of the experience. Their selection of nine mini vol-au-vent canapés and the Paxton and Whitfield cheese board are excellent choices for sharing with companions. Finish with a seasonal dessert such as the Nutcracker almond and chocolate sponge for a final note of flair. The room itself is bright and architectural, filled with natural light earlier in the day. The bustle of the hall feels muted once you are seated in the dining section. It is immersed in the atmosphere, but still separate and relaxed. Service is calm, precise and without delay, which matters when time does. Returning to the same table between intervals reinforces continuity and removes the pressure that often defines interval dining.</image:caption>

<image:title>Edits - An Evening in Mayfair, Edited - Image: Claridge’s exterior by night. © 2026 Palates & Miles</image:title>
<image:caption>Claridge’s is your anchor reservation for the evening and what you should be constructing your preceding activities around. It is the room that finishes the night properly, with service that understands pace and presence and a setting that asks you to lean into the occasion. Treat it as the main event, not an add-on or final flourish. Booking note: Reserve in advance, particularly for Thursday to Saturday evenings. If you have a preference on where you want to sit, mention it when you book. Where to sit: Request a table that feels settled, away from the main flow of arrivals. The room is at its best when you can watch it without feeling part of the traffic. The main bar area is by far the liveliest and you certainly feel part of the action and ritual, but you may struggle to enjoy the slower-paced atmosphere there. A table in either of the two rooms (including the dedicated Snuggery) just before the main bar area is more relaxed and atmospheric. What to order: Start with one classic. The art of a well-made martini should not be missed here. If you are unsure what to order, ask for something spirit-forward and clean, or something lighter that suits early evening. Let the first drink set the tone. There is a considered food menu where you can order small bites (crudités) or go all out and order a full main (fillet of Scottish salmon). Every requirement is well catered for. What to wear: This is the moment for the outfit you saved. Jackets for men are encouraged, but by no means necessary. For everyone else, keep it polished and intentional. Bring a light layer for the walk home, even when the day felt warm and, of course, as it is London, have a good umbrella to hand.</image:caption>

<image:title>Edits - A September Weekend in Paris, Refined. - Image: The Eiffel Tower at night. © 2026 Palates & Miles</image:title>
<image:caption>For the perfect light before the seasons change, mid-September is the ideal balance of pace and ease. The streets, once busy with summer tourists and families, return to their normal cadence with Parisians and weekend visitors filling the city’s bistros. Arriving on Friday just after midday (perfect if travelling on the Eurostar from London) allows sufficient time to settle in before exploring in the later part of the afternoon. There is no shortage of daylight in the early evenings and you can easily find the perfect spot to view the Eiffel Tower light up at dusk’s first hue (particularly impactful if it’s your first time). If you want to experience the city in full autumnal flair, early October is an excellent alternative. The streets shift tone, Parisians don their long coats (but still continue to wine and dine outdoors) and window displays take on an amber glow as regional produce comes into its own. Late summer in Paris can be intimidating and at times oppressive, however the weather is most definitely at its best. Aiming for the earlier part of September will still bring good weather, but it can change fast and at times without warning. No matter when you visit, make the most of the daylight to explore and let the City of Light do the work in the evenings (you won’t regret it).</image:caption>

<image:caption>The winter garden at the heart of the hotel is the perfect space to spend a few hours relaxing and taking in the ambience of the grand setting without fuss. For an even more opulent experience you can dine at the Verrière restaurant housed within the space. Next door is the iconic Café de la Paix, where breakfast is served. This is a reservation worth making if you are staying at the hotel. The food is decadent (think steak worth sharing), presented with true Parisian service and flair.</image:caption>

<image:title>Edits - A September Weekend in Paris, Refined. - Image: Tea time in the Club Lounge. © 2026 Palates & Miles</image:title>
<image:caption>Room note For that one standout room, a Premium Room Opera View is the one to go for. Red furniture, the kind you would find next door in the Palais Garnier, adorns the room. Large windows open onto small balconies with extraordinary views of the famed opera house and you feel like you are part of the story. Adding Club Lounge access to your reservation is what transforms the experience from memorable to unforgettable. This truly is the space where service is personalised but never intrusive and where you can rest between activities and exploring. Champagne is always available and afternoon tea is served with elegance. In the evening it becomes an elegant affair with canapés and a selection of drinks to set you up perfectly for the night ahead. P&M Tip: Club Lounge access gives you the opportunity to check in and out from the lounge and this is highly recommended for the best experience.</image:caption>

<image:title>Edits - A September Weekend in Paris, Refined. - Image: Table setting at Bar Vendôme © 2026 Palates & Miles</image:title>
<image:caption>Few things surpass a considered dinner under the Belle Époque glass roof of the Bar Vendôme. The atmosphere in the early evening (especially before the sun sets over the Ritz) is simply stunning. You are instantly transported to a place of tranquillity and elegance. The tables are set with crisp white linen and iconic tableware ensuring you know exactly where you are dining. The room moves at a slower pace than the street outside and it feels like the city is, quietly, just for you in that moment.</image:caption>

<image:title>Edits - A September Weekend in Paris, Refined. - Image: Burrata starter at Bar Vendôme © 2026 Palates & Miles</image:title>
<image:caption>The menu is not fussy, instead it is elegant and fresh (using the best Parisian produce available). There is a wide variety contained within the refined menu, so everyone and every price point is catered for. Do not hesitate to ask for recommendations, they are always very happy to advise. A sommelier is on hand to help choose the perfect wine or cocktail to match your culinary adventure. If you are unsure, start with a classic cocktail and let the first course set the direction. Booking note: Aim to reserve in advance, particularly for a Friday or Saturday evening in September. If you are celebrating, mention it in the booking. This is the sort of place that quietly elevates the experience when they know the occasion.</image:caption>

<image:title>Edits - A September Weekend in Paris, Refined. - Image: Vaulted ceiling of Notre-Dame Cathedral © 2026, Palates & Miles</image:title>
<image:caption>A morning visit to Notre-Dame is ideal as the crowds do not tend to descend in their droves before 11am. A visit to the restored grande dame of Paris should not be passed up as it is one of the most stunning architectural restoration projects of the twenty-first century. The white stone of the interior gleams upon entry and the spiritual significance of the space is instantly revealed to tourists and worshippers alike. Post-visit, a walk around the cathedral exterior and surrounding streets is equally mesmerising (especially when you begin to spot the ornate Gothic details) and an activity that should be done at leisure and without haste. Located across the Seine is the iconic Rue Vieille du Temple, where Parisians go to shop and sit outside cafés and bistros (especially on a Saturday). Shopping in the refined boutiques and high-end stores is especially rewarding after a morning of exploration. One store worth visiting, located just off the main path on Rue de Thorigny, is Histoires de Parfums, where you can sample their full library of scents crafted for storytelling. P&M Tip: A quick refuelling stop at Le Louis Philippe bistro, just off the bridge it shares a namesake with, is an excellent choice for culinary delights and an energy boost before hitting Rue Vieille du Temple.</image:caption>

<image:caption>Midtown, when you want everything to be easy The Whitby Hotel (A Firmdale Hotel) is the rare Midtown base that feels like an oasis rather than a staging point. The energy is warm and design led, thanks to Kit Kemp’s exemplary designs. The room mood is well considered and the property is exceptionally well located for broadway shows, shopping, or a classic morning stroll in Central Park. If you want to be in Midtown without feeling pushed around, this is your first choice. Dinner in the Whitby Bar is worth it even if you are not staying at the hotel. The atmosphere is a genuine pull; the Orangery is a room people want to stay in well after the meal is over. Room note. Prioritise asking for a higher floor room and request a quieter aspect (ideally away from 56th street) if you are sensitive to city sounds. If you are celebrating, tell them in advance, this is a hotel that focuses on service and attention to detail.</image:caption>

<image:caption>The Palm Court at The Plaza Go here for light bites and cocktails when you want New York glamour without committing to a full meal. It is polished, beautifully staged and it presents the season at its finest. The room does a great deal of work on your behalf. Timing note. Go earlier in the evening if you want the space to feel composed. Later can become busy and less elegant. Table note. Request a side table (for a view of the entire room) when you book and be sure to mention any special occasions or context for the evening. The experience improves when the staff know why you are there. Booking ahead is not optional in December, it is essential. Walks in are next to impossible, even if you can get past the doormen. What to order. Keep it light and classic (Beef sliders are an excellent option). This is the place for a proper cocktail and something refined, rather than an overly ambitious meal. The point is the room, the pace and the feeling of being looked after.</image:caption>

<image:title>Edits - New York City at the most magical time of year - Image: A quiet room at Keen's post lunch service. © 2026 Palates & Miles</image:title>
<image:caption>Lunch at Keens Steakhouse Keens is a proper New York institution that still feels honest. It is atmospheric and reassuring, particularly in winter. It is an easy lunch choice that feels like a decision rather than a compromise. Timing note. If you can, treat it as a lunch anchor rather than trying to force it into a rushed schedule. The room rewards you when you settle in towards the end of lunch service and it slowly begins to empty out. Table note. The space has its own character, but the energy matters. For lunch, ask for a table upstairs, especially if you want that classic, unhurried New York feel. If you want to visit for dinner, it is lively on all levels, but it still maintains that timeless character. What to order. This is the obvious moment for steak, but the real point is doing it properly. Order with confidence, keep the sides classic. Try not to over complicate it and ensure you leave space for their famous Key Lime Pie. Keens does best when you let it be itself.</image:caption>

<image:title>Edits - New York City at the most magical time of year - Image: Elegant tables at the River Café. © 2026 Palates & Miles</image:title>
<image:caption>Dinner at The River Café This is the reservation for views, especially after sunset. You go for the skyline, the water and the feeling of being slightly removed from the city whilst being still fully immersed in it. It is one of those places that makes you remember New York long after you have left. Timing note. Book with the light in mind. Your 8pm reference is useful, but if you can catch the earlier part of the evening it also allows for a walk back across the Brooklyn Bridge to Manhattan. Table note. Request a window side table at the point of booking and make the reasons for it explicit. Outreach before the day is key and it improves the chances of getting the table that makes it the meal to remember. What to order. Keep it elegant and let the room lead. This is not the evening for experimental choices. It is the evening for a composed menu (especially with seasonal notes), a glass (or bottle) you actually want to drink and a pace that matches the view. What to wear. Formal wear is a must here and the room demands it, especially in that evening light. Jackets for Men are non-negotiable, but don’t be afraid to add some flair, it won’t go unnoticed.</image:caption>

<image:caption>The cultural anchor to build a day around The Nutcracker at The Lincoln Center If you do one cultural anchor in December, make it this. The experience is not just the performance, it is the ritual of attending. The building, the crowd, the sense of occasion. It is one of the few things in the city that can match the seasonal spectacle outside, without feeling forced. Dress code matters here. People do make an effort and the night is better when you do too. Think polished rather than theatrical. A dark coat, good shoes and something that reads intentional. It is not black tie, but it is not casual. You will feel underdressed if you treat it like a standard night out. It’s also conveniently located for a visit to The Palm Court after, so factor that in to your wardrobe planning. Planning note. Book ahead. December performances attract people who book early and the best seats disappear quickly. Do not rely on returns or last minute ticket releases.</image:caption>
