About Palates & Miles

Elegant restaurant table setting with a decorative black plate holding a dessert garnished with a gold leaf and sauce. A glass of white wine, a water glass, and a napkin with cutlery are on the table.

Palates & Miles is a considered edit of hotels, restaurants and global travel. It exists to take the guesswork out of spending well, where to stay, where to book, what to order, and what is genuinely worth the time.

Each recommendation is written as a practical note for planning. The point is clarity: what delivers, what does not and what small details change the experience.

The standard

Every place is judged on the same question: would this be worth returning to and recommending, even if nobody asked.

If it does not deliver on what it promises, it does not make the edit.

How the edit works

Each feature is designed to be used. Expect direct recommendations, a sense of the atmosphere and the specifics that matter when you are actually booking.

You will not find clutter, lists for the sake of it, or vague superlatives. Just a considered opinion, written with enough detail that you can decide quickly.

What we look for

Service that feels calm, consistent and attentive without being overbearing.
Design that is intentional, with materials, lighting and layout that support the mood.
Food and drink with clarity and craft, where flavour and execution match the setting.
Atmosphere with the right energy for the occasion, from sound to pacing to crowd.
Value that earns the price, not “cheap or expensive”, but worth it.

What you will always get

A clear recommendation on the best room to request or table to book, and why.
What to order, what to skip and what the kitchen does best.
Timing notes that change the experience: day, time, season and booking lead time.
A short “who it’s for” line so expectations are set.
Practical notes when relevant, including dress code and accessibility where known.

Based in the UK. New edits weekly.

Transparency

Hosted stays and invitations are always noted.
